The First Leaves of Spring

There is a fortnight in April when the tea bushes push out their first new growth of the year, and the leaves are soft enough to tear between two fingers. That is the whole of Kasumi. Nothing else. Waiting for exactly that window is what gets you a green that looks lit from inside the cup, a sweetness that arrives before anything else does, and a finish that clears rather than lingers.

The Tea Itself

Grown, steamed, dried and ground in Uji, Kyoto, the region that has been doing this since the fourteenth century and still sets the benchmark. Every decision behind a matcha turns up later in the cup and here is what stands behind this one.

First Harvest Only

The first flush is the most tender growth of the season with the most L-theanine, the amino acid responsible for the savoury depth people call umami. Later pickings are cheaper, sturdier, and useful, but they also bring astringency and a duller green. Leaving them out is what separates Kasumi from a standard blend.

Chosen for Sweetness

Two cultivars, Okumidori and Saemidori, both prized in Japan for delicate floral character and natural sweetness. Saemidori is sweeter and brighter, with unusually low astringency for a tea that has not been shaded to ceremonial length. Okumidori brings deeper colour and savoury weight underneath it.

Just Below Ceremonial

Culinary grade is built to punch through milk and sugar. Ceremonial is built for water and nothing else. Kasumi is the overlap: refined enough to drink neat, present enough that it does not vanish into a twelve-ounce latte.

Getting the Most Out of It

Preparation

Sift 5g. Add 60ml of water at 70-80° and whisk in a W motion until a fine foam holds on the surface. (Boiling water scorches tender leaf and drags out the bitterness, the single most common way good matcha is ruined.) For a latte, build the same base and add 180ml of your favourite mylk/milk. Taste it before you sweeten. It rarely needs what you would give it out of habit.

Milk Pairings

Dairy gives the cleanest reading of the umami. Oat is sweetest and rounds off every edge. Soy brings body and a nuttiness that meets the tea halfway. It also works with fruit (strawberry, yuzu, stone fruit) where a more bitter matcha would fight the acidity instead of sitting beneath it.

Storage and Freshness

Room temperature is fine unopened, but the fridge or freezer is better. Sealed or open, matcha oxidises and light and heat dull the colour first. Let a cold bag come back to room temperature before opening so condensation doesn't get into the powder.

Matcha Latte (Ice Optional)

Method

  1. Sift 2g of matcha into a cup or bowl.
  2. Add 60ml of water at 70–80°C — not boiling, which scorches the leaf and pulls out bitterness.
  3. Whisk in a W motion until a fine foam holds on the surface.
  4. If you want it iced, fill a tall glass with ice and pour the matcha over. If you want it hot, leave it where it is.
  5. Top with 180ml of milk, or the mylk of your choice.
  6. Taste it before you sweeten. It rarely needs what you would give it out of habit.

Shortcut: for the iced version you can skip the whisk entirely and shake the matcha, water and milk together in a sealed bottle.

Method

  1. Sift 2g of matcha into a warmed bowl to break up any clumps.
  2. Add 60ml of water at 70–80°C. Never boiling — it scorches the leaf and drags out a bitterness that was deliberately bred and shaded out of it.
  3. Whisk briskly in a W motion, keeping the whisk off the base of the bowl.
  4. Stop when a fine, even foam holds on the surface. Drink straight away.

Pandan Chrysanthemum Tea Matcha Cold Foam

Method

  1. Steep 2 tbsp dried chrysanthemum and 2 knotted pandan leaves in 500ml hot water for 8–10 minutes.
  2. Sweeten lightly with honey or rock sugar while still warm, then strain and chill.
  3. Make the foam: whisk 1 tsp matcha with 30ml warm water until smooth, add 80ml cold cream or milk, and froth until thick and pourable.
  4. Pour the chilled tea over ice.
  5. Pour or spoon the matcha foam gently on top.

Optional: for a lighter drink, mix in chilled coconut water with the tea at a 1:1 ratio

Earl Grey Cold Foam Matcha Latte

Method

Recipe:
2 tsp Kasumi, whisked with 45ml of 80 degree water
120ml milk

Cold foam:
3 tbsp heavy cream
2 tbsp milk
1 tbsp earl grey syrup

Whisk, pour over ice with the milk, froth the foam, top it off.

Best Matcha I ever bought!

I love this matcha so much, it mixes in so incredibly well. I noticed this when I was cold whisking my oat matcha latte, when I went camping! We ran out of gas for hot water and I was so surprised, the quality is really nice too.

We did a cute lil matcha camp cafe, everyone LOVED it!!

I have matcha everyday so I use this for either my afternoon matcha latte or my matcha banana protein smoothie!!
